- 2 Garlic cloves finely chopped
- 1 Onion finely chopped
- 150 ml Chicken stock
- 150 ml Double cream
- 100 g Sun-dried tomatoes chopped
- A handful of fresh spinach
- 1 tsp dried Italian herbs or oregano/basil
- Salt and black pepper to taste
Prepare the chicken – Season chicken breasts with salt and pepper. Heat olive oil in a pan and brown the chicken for 4–5 minutes per side. Remove and set aside.
Make the base – In the same pan, sauté onion and garlic until soft and golden.
Create the sauce – Stir in the chicken stock, cream, sun-dried tomatoes, and herbs. Let it simmer for 5 minutes.
Add chicken back – Place the chicken into the sauce and cook gently for another 10–12 minutes until fully cooked.
Finish with greens – Stir in spinach just before serving so it wilts into the sauce.
