Ingredients
  

  • 4 Chicken breasts skinless and boneless
  • 2 tbsp Olive oil
  • 2 Garlic cloves finely chopped
  • 1 Onion finely chopped
  • 150 ml Chicken stock
  • 150 ml Double cream
  • 100 g Sun-dried tomatoes chopped
  • A handful of fresh spinach
  • 1 tsp dried Italian herbs or oregano/basil
  • Salt and black pepper to taste

Instructions
 

  • Prepare the chicken – Season chicken breasts with salt and pepper. Heat olive oil in a pan and brown the chicken for 4–5 minutes per side. Remove and set aside.
  • Make the base – In the same pan, sauté onion and garlic until soft and golden.
  • Create the sauce – Stir in the chicken stock, cream, sun-dried tomatoes, and herbs. Let it simmer for 5 minutes.
  • Add chicken back – Place the chicken into the sauce and cook gently for another 10–12 minutes until fully cooked.
  • Finish with greens – Stir in spinach just before serving so it wilts into the sauce.
