Brown the Beef: Heat a pot with olive oil or cooking spray. Add beef cubes and cook until browned on all sides. This step adds deeper flavor.
Add Vegetables: Add onion, garlic, carrots, and celery. Cook for 3–4 minutes until slightly soft and aromatic.
Build the Stew Base: Stir in tomato paste, thyme, and paprika. Add beef broth and water. Mix well and bring to a boil.
Simmer Until Tender: Lower the heat, cover the pot, and simmer for 1 to 1.5 hours, or until beef becomes tender. (Instant Pot: 35 minutes • Slow Cooker: 6–8 hours on low)
Add Potatoes & Peas: Add potatoes in the last 30 minutes of cooking. Peas can be added in the final 10 minutes to keep them bright and fresh.
Thicken the Stew (Optional): If you like a thicker stew, add the cornstarch mixture and simmer for a few more minutes.
Season & Serve: Taste and adjust seasoning with salt and pepper. Serve hot and enjoy!
