Weight Watchers Beef Stew

Ingredients
  

  • 1 lb (450g) lean beef stew meat
  • 3 medium carrots, sliced
  • 2 medium potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cups low-sodium beef broth
  • 1 cup water
  • 1 cup frozen peas (optional)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil (or cooking spray to lower points)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 tbsp cornstarch (mixed with 2 tbsp cold water — optional for thickness)

Instructions
 

  • Brown the Beef: Heat a pot with olive oil or cooking spray. Add beef cubes and cook until browned on all sides. This step adds deeper flavor.
  • Add Vegetables: Add onion, garlic, carrots, and celery. Cook for 3–4 minutes until slightly soft and aromatic.
  • Build the Stew Base: Stir in tomato paste, thyme, and paprika. Add beef broth and water. Mix well and bring to a boil.
  • Simmer Until Tender: Lower the heat, cover the pot, and simmer for 1 to 1.5 hours, or until beef becomes tender. (Instant Pot: 35 minutes • Slow Cooker: 6–8 hours on low)
  • Add Potatoes & Peas: Add potatoes in the last 30 minutes of cooking. Peas can be added in the final 10 minutes to keep them bright and fresh.
  • Thicken the Stew (Optional): If you like a thicker stew, add the cornstarch mixture and simmer for a few more minutes.
  • Season & Serve: Taste and adjust seasoning with salt and pepper. Serve hot and enjoy!
